 DIY Wagamama Vegan Ramen Recipe

As I told you that I have been a big fan of vegan ramen by wagamama, hence I crave for it more than and obviously I may not usually be able to make it to the restaurant.

Therefore, I have tried many recipes and then come up with my own version of it.

Ingredients that you may need:

  • Vegetable broth 4 cups
  • Coconut milk 1 can
  • Tofu 200 grams
  • Udon noodles 200 grams
  • Mushrooms 1 cup
  • Turmeric 1 tsp
  • Soy sauce 2 tbsp
  • Miso paste 1 tbsp
  • Shichimi 1 tbsp
  • Chopped Bok choi 1 cup
  • Menma ½ cup
  • Shredded carrots ½ cup
  • Pea shoots ½ cup
  • Fresh coriander and sliced chilli.

Preparation:

  • Combine coconut milk, turmeric and miso paste with veggie broth.
  • Stir until mixed and infused completely.
  • Coat tofu into shichimi.
  • Cook udon noodles in hot boiling water for 4 minutes, drain excess water when cooked.
  • Grill mixed mushrooms and add bok choi until half cooked.
  • In a bowl, pour noodles, add shredded carrots, menma and pea shoots.
  • Now add mushrooms with bok choi.
  • Pour vegetable broth over it.
  • Now add tofu, garnish with coriander and chilli slices.
  • Serve hot as it tastes best when fresh.
