Therefore, I have tried many recipes and then come up with my own version of it.

- Coconut milk 1 can
- Tofu 200 grams
- Udon noodles 200 grams
- Mushrooms 1 cup
- Turmeric 1 tsp
- Soy sauce 2 tbsp
- Miso paste 1 tbsp
- Shichimi 1 tbsp
- Chopped Bok choi 1 cup
- Menma ½ cup
- Shredded carrots ½ cup
- Pea shoots ½ cup
- Fresh coriander and sliced chilli.
Preparation:
- Combine coconut milk, turmeric and miso paste with veggie broth.
- Stir until mixed and infused completely.
- Coat tofu into shichimi.
- Cook udon noodles in hot boiling water for 4 minutes, drain excess water when cooked.
- Grill mixed mushrooms and add bok choi until half cooked.
- In a bowl, pour noodles, add shredded carrots, menma and pea shoots.
- Now add mushrooms with bok choi.
- Pour vegetable broth over it.
- Now add tofu, garnish with coriander and chilli slices.
- Serve hot as it tastes best when fresh.
