Shu's Shiok Chicken
  • Make spice paste with ginger, garlic, lemon grass, chillies, and shallots.
  • Marinate the chicken with the spice paste and coconut milk, lime juice, and mint leaves.
  • Place the marinated chicken in the fridge for 4-5 hours. 
  • Thinly cut all the vegetables, including cucumber, red radish, red onion, and carrot.
  • Take a bowl and add sugar, apple cider vinegar, and salt, then bring it to a boil and let it cool.
  • Pour half of the liquid over the radishes and set it aside.
  • For salad dressing, add mint and coriander into the remaining half of the apple cider vinegar liquid and set it aside. 
  • Cooked the sticky rice.
  • Grill the marinated chicken until it is perfectly cooked and then thinly slice it.
  • Take a serving dish and place rice on it, place marinated chicken, and then salad. 
  • Add salad dressing you’ve prepared earlier over the salad. Enjoy!
